Banana Chocolate Chip Muffins

Coffee shop muffins are definitely high in calories and fat-sometimes 600 calories and 30 grams of fat or more! This muffin recipe using mashed bananas and yogurt eliminates the need for a lot of oil. It’s perfect for a snack or a lighter dessert.

 

 

RECIPE INSTRUCTIONS
1. Preheat oven to 375ºF. Spray 12 muffin cups with vegetable oil.

2. Using an electric mixer, beat together bananas, sugar, oil, egg and vanilla in a large bowl until well mixed.

3. In another bowl, combine flour, baking powder and baking soda. Stir the banana and flour mixture together. Stir in the yogurt. Fold in the chocolate chips.

4. Divide the batter among the prepared muffin cups and bake in centre of oven for 15 minutes and a tester inserted in the middle of the muffin comes out clean. Turn out and serve immediately.

INGREDIENTS
3/4 cup ripe bananas, mashed (about 1 1/2 medium bananas)
1/2 cup granulated sugar
1/4 cup vegetable oil
1 egg
1 tsp vanilla
1 cup all purpose flour
1 tsp baking powder
1 tsp baking soda
1/2 cup low-fat plain yogurt (or low-fat sour cream)
1/4 cup semi-sweet chocolate chips
