Rose’s Breakfast Cookies

These cookies are beyond fantastic and great to grab and go in the morning. Healthy ingredients give you a great boost and make this a hit breakfast item, snack or even dessert.

RECIPE INSTRUCTIONS
1. Mix dry ingredients together in a bowl. Add wet ingredients, combining until all incorporated. Use a 1/3 measuring cup to make cookies. Pat down gently on baking sheet sprayed with vegetable oil. Bake for approximately 12 minutes at 350F. Do not overbake.

INGREDIENTS
2 cup rolled oats
1 1/3 cup whole wheat flour
½ cup rice flour
½ cup wheat bran
2 tsp cinnamon
1 2/3 cup finely chopped nuts or seeds
½ cup flaxseeds or sesame seeds
2 cups chopped dried fruits (dates, raisins, cranberries or other combination)

1/2 cup maple syrup
½ cup honey
¾ cup oil
4 tsp molasses
2 eggs
¼ cup peanut butter
2 tsp vanilla
