Smoked Trout, Avocado and Cheese Tortilla Slices

These are great appetizers to serve at a dinner party. Smoked trout is usually available in the fish section of your supermarket. If it’s unavailable, use smoked salmon or another smoked fish.

RECIPE INSTRUCTIONS
1. Beat the ricotta, cream cheese, mayonnaise, lemon juice, mustard and pepper together in a food processor, or in a bowl using an electric mixer, until smooth. Stir in the dill.

2. Divide and spread the mixture evenly over the 4 tortillas. Sprinkle each one evenly with spinach, avocado, red pepper, onion and trout. Roll up tightly.

3.Wrap rolls in plastic wrap and chill until just cold. Cut each tortilla on the diagonal, into 6 pieces.

INGREDIENTS
2/3 cup light ricotta (5%)
1/4 cup light cream cheese, softened
11/2 Tbsp light mayonnaise (or low-fat sour cream)
11/2 Tbsp lemon juice
1/2 tsp Dijon mustard pinch of pepper
2 Tbsp chopped fresh dill (or ½ tsp dried dill)
1 cup baby spinach
1/3 cup diced avocado
1/2 cup finely diced red bell pepper
1/4 cup finely diced red onion
4 oz smoked trout, flaked
4 large flour tortillas
