Tofu and Edamame

A tasty veggie recipe that even meat-eaters will love!

RECIPE INSTRUCTIONS
1. Cut tofu into 1” squares. Add to bowl along with cornstarch and soy sauce. Mix well. In a large skillet sprayed with vegetable spray, add oil and sauté tofu until brown and crisp on all sides. Set aside.
2. In a small sauce pan, add all the sauce ingredients and mix until cornstarch is dissolved. Bring heat to a boil then simmer for 2 – 3 minutes just until thickened. Add more water if too thick.
3. Bring pot of water to boil add edamame and boil for 1 minute. Drain, place on serving plate and add tofu. Drizzle sauce over top and sprinkle with sesame seeds.

INGREDIENTS
2 packages (350 g/12oz package) extra firm tofu
3 Tbsp cornstarch
2 tsp light soy sauce
2 tsp oil

Sauce
¼ cup light soy sauce
2 Tbsp molasses
1 Tbsp brown sugar
2 tsp grated ginger
1/3 cup water
1 Tbsp cornstarch
1 Tbsp water

2 cups edamame, shelled
